Cross-contamination risks are common in the food processing industry, making it crucial for food producers to protect consumers from the consequences of accidental gluten intake. According to many national authorities and the Codex Alimentarius standard 118-1979, the level of gluten in food must not exceed 20 mg/kg (20 ppm) for products to be labeled gluten-free.

Highly specific, next generation antibody - G12®

In addition to the polyclonal gluten antibody used in its traditional test kits, Romer Labs offers methods that employ a next-generation antibody, the G12®. This monoclonal antibody was raised against a 33-amino-acid-long peptide that contains a repetitive epitope from Alpha-2-gliadin and is and a principal contributor to gluten immunotoxicity. The 33-mer is highly resistant to digestive degradation and is therefore well suited as an analytical marker.

The G12® antibody targets a toxic peptide of gluten that triggers the autoimmune reaction in celiac patients, making it more relevant for food safety.

The AgraStrip® Gluten G12® LFD test kit holds the certification of the AOAC Research Institute for Performance Tested methods (Certificate No. 061403).

LFD - AgraStrip® Gluten G12®

The AgraStrip® Gluten G12® test kit is designed for the on-site detection of gluten in solid and liquid foodstuffs, rinse waters and environmental samples. This state-of-the-art lateral flow device delivers accurate results in just 11 minutes, including extraction time, making it an ideal choice for fast-paced environments.

The G12® antibody represents the next generation of gluten testing, as it targets toxic peptides that trigger auto-immune reactions in people suffering from celiac disease. It is a monoclonal antibody that was raised against the immunotoxic 33-mer peptide containing epitopes from the gliadin fraction in gluten. Results obtained from immunochemical test systems based on the G12® antibody should be considered to be closer to the ideal of a food safety test, as they establish the important link between celiac disease and detection of the immunotoxic peptides.

The AgraStrip® Gluten G12® LFD kit holds the certification of the AOAC Research Institute for Performance Tested methods (Certificate No. 061403).

ELISA - AgraQuant® Gluten G12®

The AgraQuant® Gluten G12® is a sandwich enzyme-linked immunosorbent assay (ELISA) designed for the quantitative analysis of gluten in a variety of foods. Samples can vary from raw to processed foods, from environmental swabs to rinse water.

The G12® antibody targets a 33-mer peptide which is resistant to enzymatic digestion and heat denaturation, and is the fragment of the gliadin protein to which celiac disease sufferers react, making it a reliable analytical marker. This product is intended for laboratory use.
